CGM, in partnership with Kimpton Hotels & Restaurants, seeks an experienced Food & Beverage Director for a new 292 room Luxury Hotel (with additional 270 Luxury Apartments), located in the northern Chelsea area of Manhattan (851 Avenue of the Americas, between 29th & 30th streets).
Opening in April 2010, the hotel has over 10,000 square feet of meeting space, 24 hr room service, a high end bar and restaurant and a casual but sophisticated indoor/outdoor food park.
The ideal candidate for the Food & Beverage Director position will have previous experience working in partnership with a hotel food & beverage team in a high volume restaurant setting. Further, the candidate will have the necessary experience to successfully support the development, opening and operation of a food park consisting of up to seven different food outlets.
Prior experience with large banquet and catering events, 24 hour room service and operation of a minimum of three food & beverage outlets consecutively providing service to guests is strongly preferred.
This position will require an individual who is a detail oriented, analytical, hands on leader with the knowledge to direct and organize the activities of the Food & Beverage Department to maintain high standards of food and beverage quality, service and sales to maximize profitability.
Job Requirements:
- Interview, hire, train, recommend performance evaluations, resolve problems, provide open communication and recommend discipline and/or termination when appropriate.
- Plan and direct the functions of administration and planning of the Food and Beverage Department to meet the daily needs of the operation.
- Clearly describe, assign and delegate responsibility and authority for the operation of the various food and beverage sub-departments, e.g. room service, restaurant, banquets, kitchens and bars.
- Develop, implement and monitor schedules for the operation of all food and beverage departments to achieve a profitable result and quality of service.
- Implement effective control of food, beverage, labor costs and operating expenses among all departments to Company standards.
- Abide by all State, Federal and Corporate requirements pertaining to serving alcoholic beverages.
- Assist managers in establishing and achieving predetermined profit objectives and desired standards of food quality, service, cleanliness and promotion.
- Regularly review and evaluate the degree of guest satisfaction of the restaurant and banquet service, to recommend new operating and marketing policies whenever declining or constant sales imply dissatisfaction by the customers, a material change in the make-up of the customer market, or a change in the competitive environment.
- Develop operating tools necessary and incidental to modern management principles, e.g. budgeting, forecasting purchase specifications, beverage controls, food production control etc.
- Continuously evaluate the performance and encourage improvement of the team members in the food and beverage department. Plan and administer a training and development program within the department which will provide well trained team members at all levels.
- Ability to effectively communicate both verbally and in writing to provide clear direction to staff.
- At least 5 years of experience in the position of Food & Beverage Director within a luxury hotel.
- Prior experience in the position of Restaurant Manager and Bar/Lounge Manager.
- Ability to maintain a management presence on the restaurant and bar floor during high volume periods.
